For our second recipe - spreading joy this spring, high school senior and @onelovecommunityjunior president, Joie Berhe-Lumax @fruiit.punch_ , shares a recipe with one of her favorite protein staples, eggs. 🥚🍞

 
 
 
 
 
 

Egg Salad Sandwiches

Ingredients

12 Hard-boiled Eggs (cooled and peeled)
1 Cup Mayonnaise
1 Tbsp Yellow or Dijon mustard
2 Green Onions (thinly sliced)
Salt & Black Pepper to taste
Toasted White Bread

Serves 4-6g

Directions

To prepare the egg salad, cut the eggs in half, transferring the yolks to a bowl while finely chopping the whites. Using a fork or your hands, mash the yolks. Mix in the mayonnaise, mustard, salt, and pepper until smooth and creamy. Stir in the chopped egg whites and green onion, adjusting the seasoning to taste. Serve with toasted white bread.
