OLCF Lunch Hour No. 10 — Onigiri with Eny & Noah

Lunch Hour is more than just a meal at One Love Community Fridge; it's when we connect over food and pack meals for our community fridges.

This week’s Lunch Hour is hosted by our friend Eny Lee Parker with recipes by Noah Hammer of Onigiri Noah

Miso Corn

Ingredients

280g Corn (preferably fresh but canned works just fine)
2 Tbsp White Miso
2 Tbsp Honey
Large pinch of Aosa (A type flaky nori you can sprinkle over various Japanese dishes)
1 Tbsp sesame seed oil

Directions

  1. Heat a pan on medium

  2. Add sesame seed oil

  3. Once heated, add miso and honey

  4. Allow the above mixture to reduce and thicken (~5-10 mins)

  5. Add corn and continue to cook for another 5-10 mins

  6. Once additional moisture from corn has reduced (consistency should be that of a paste) remove pan from heat

  7. Add aosa and mix in evenly

  8. Finally, you can use this as a rice topping, as a filling in onigiri, as a topping for a salad, or simply enjoy by itself
